A huge part of writing is staying healthy. I love Charles Bukowski, but I don't have his constitution. I'm probably boring, but I work better and more consistently when I eat right, exercise, sleep, and keep a regular schedule. If those pieces aren't working together, it provides too many opportunities for me to go off the rails.
Lately, I've been low carbing it. I don't really have a name for the diet. At this point, I've cut out as much sugar as I can. Here's a dinner I've tried a few times that's perfect for midweek. It fits the program and is fairly simple.
First, I start with Uncle Steve's Marinara Sauce. If I have time, I make my own sauce. However, I really like this one because I can actually taste the olive oil in it. It's really nice.
I use a nice grass fed beef. Brown that up and add the sauce. I let it cook together on a low simmer for as long as I can.
Here's the kicker. For this dinner, I don't use pasta. I use this little machine in order to turn zucchini into noodles. There are a lot of vegetable noodlers out there. I picked this one up on Amazon for less than ten dollars.

After that, I throw the noodles into a pan with a little garlic and olive oil. This part of the process is to soften up the zucchini a bit. Top it with some of the sauce and enjoy.
